Put oil in large pan over med heat. Add bell peppers and pineapple and cook 4-5 minutes. Add garlic, green onions, and shrimp and cook another 3-4 minutes. Remove from pan and set aside.
Add honey, soy sauce, ginger, and pepper flakes and stir. Continuing stirring and cooking until it becomes thicker.
Add the shrimp and veggies back into the pan and stir till everything is coated well.
Serve over rice.
